“Italian ” humus

500 g of chickpeas (canned or cooked at home)

1/4 of white onion

2 cloves of garlic

1 rosemary

the juice of one lemon

salt, pepper

parsley

 

Cooking time 30 minutes

 

Put the onion in the pan with a glass of water and add 1 clove of garlic, rosemary and cook.

When the onion is cooked, add the chickpeas and cook for 10-15 minutes, eventually adding more water.

Now use the mixer blending everything : chickpeas, onion, garlic and lemon juice.

If this mix is a little bit dry, put some water on.

Mince the parsley and put some pepper, now it's ready.

By serving one can add fresh rosemary and a clove of garlic....

Very good with toasted bread
