Roast vegetable sauce

6 ripe tomatoes

6 red onions

2 carrots

1 little eggplant

100g of packaged ham 2% fat or packaged chicken or roasted turkey,

2 glasses of white wine

 

Time 3 hours and half

 

Dice all the vegetables, add the diced ham and cook at temperature of 180°(I used greaseproof paper laid on the baking tray) for 15/20 minutes, then put the temperature up to 130°, and pour with white wine.

Let it cook with low flame stirring sometimes.

This sauce is perfect to season pasta, cous cous or for canapè
